Meat Week: Jalise and Justine’s Wild Turkey Recipe

J & J Wild Turkey Recipe

A successful hunt means food on the table!  With turkey season fast approaching, we have your back with this turkey recipe from Jalise and Justine Williams.

Brine Ingredients:

  • 2 gallons of water or enough to cover the bird
  • 1 1/2 cups salt
  • 3 TB minced garlic
  • 1 TB black pepper
  • 1/2 C brown sugar

Cooking Turkey Ingredients:

  • Oil
  • Cajun Seasoning
  • 1 apple
  • 1 onion
  • 1 lb. Bacon

Step 1:

In a large container, mix together water, salt, garlic, black pepper and brown sugar.  Place Turkey into water. Store for 6 hours.

 

Step 2:

Remove bird from water, drain bird and pat dry. Cut up one apple and one onion into quarters and place in the cavity of Turkey.

Rub bird with oil and sprinkle Cajun seasoning over Turkey.

Wrap Turkey legs and wings with bacon.

Drape remaining bacon over turkey, leaving small gaps between the bacon strips.

 

Step 3:

Smoker:  225 degrees for 20 minutes per pound or until internal temperature reaches 165 degrees.

 

Step 4: 

Remove from the smoker, wrap in tin foil for 10 min.

 

Step 5: 

Cut, eat and enjoy. 

p.s. Turkey will still be moist and delicious for days!
